Dolphins very active before the 2021 NFL Draft

The first big mover was actually a subtraction from the roster as the Dolphins parted ways with LB Kyle Van Noy after recently (last season) signing him to a 4YR/$51M deal. That move was followed by the eventual trade between the Dolphins and the Texans which sent DE Shaq Lawson to HOU for ILB Benardrick McKinney. The Dolphins gave the Texans our 6th RD 2021 pick in exchange for their 2021 7th RD pick. Lawson played both OLB and DE for the Dolphins last season but never really hit his stride in our defense. Van Noy was brought here for his leadership and his playmaking, but the surprising rise of OLB Andrew Van Ginkel helped make Van Noy expendable. While AVG played mostly weak side and and Van Noy played primarily strong, both were interchangeable. I’m guessing the new #55 will undergo a uniform number change as the Eagles would say Ol’ 55, Jerome Baker owns that number. McKinney will definitely solidify the middle next to Baker and and the bigger (6’4 260) McKinney brings more physicality there while Baker brings the sideline to sideline quickness and speed.

In addition to McKinney, the Dolphins further solidified the run defense with the addition of DT Adam Butler. Butler was a rotational guy on the Patriots defensive line with only 12 starts in 4 seasons but he played in all but one game, and he averaged about 45% of the defensive snaps, so he had a good amount of playing time. He’s a DT that gets good penetration, with 20 tackles for loss, 15 sacks and 22 QB hits over parts of 4 NFL seasons. Unfortunately for former Dolphins DT Davon Godchaux, that most likely seals his fate and he most likely will not be returning here. (Update!) Godchaux has signed a 2 year deal with the Patriots, thanks to a couple of FMU NFL insiders.

On the offensive side of the ball, the Dolphins signed RB Malcolm Brown from the LA Rams. Brown while never a premier ballcarrier or workhorse, he brings a more physical running style than what we currently have in Myles Gaskin, Salvon Ahmed and Patrick Laird. Brown was basically the 3rd cog in the Rams run game behind Cam Akers and Darrell Henderson. Brown had a career high 419 yards on 101 carries with a 4.1YPC. He also caught 23 balls for 162 yards and had 5 rushing TD’s. I believe this still leaves the door wide open to draft a RB, even an early pick as I think we still need a talent upgrade there. The Dolphins just recently signed former Texans WR Will Fuller to a 1 year deal. Honestly, I never wanted any part of Fuller because although he has the speed we need, he’s a guy that has a tough time staying on the field, and considering the fact that we already have that in DeVante Parker, that doesn’t give our young QB any kind of stability when guys are constantly missing time. In any case, the Dolphins do get a guy who averages on the high end of YPR (14.9) overall but a career high 16.7YPR last season along with 8 TD’s. Also keep in mind that both Allen Hurns and Albert Wilson are set to return this season after opting out due to COVID last season. Wilson and Hurns together count less than $8M against the cap so don’t count them out just yet.

We didn’t get Joe Thuney, David Andrews or even re-sign Ted Karras, so the Dolphins decided to gamble on former ravens C Matt Skura. Much like Fuller was to me, Skura wasn’t really on my radar. Skura was a 4 year started for a stout Ravens O-line, but he has had injury issues, most recently having a devastating injury 11/19 in which he tore just about anything and everything in his knee including his ACL/PCL/MCL and dislocating his knee cap. To Skura’s credit, he toughed it out last season starting 12 games and playing in 15. As to whether he’s an upgrade over Ted Karras remains to be seen, but Skura was definitely the less expensive option. It’s once again, possible we draft a center with Creed Humphrey, Landon Dickerson Josh Myers, and Trey Smith available. Dickerson and Humphrey could go as early as 2nd RD but the others should be available in the middle rounds.

There are rumors still swirling linking former Seahawks RB Chris Carson and the Dolphins. While I have no problem with bringing in Carson, in my mind at least it would have made the signing of Malcolm Brown unnecessary, but Brown at $1.75M hardly breaks the bank. If we do get Chris Carson, that would almost certainly turn our attention away from drafting a RB early in this draft, meaning no Najee Harris, Javonte Williams or Travis Etienne.

GO DOLPHINS!!!!

WR is deep in this draft class, doesn’t make much sense to take one with our 1st pick, given the current state of the roster.

I’d like to trade down with SF or Den and take Rousseau, then WR at 18

  4. Krishna's avatar Krishna says:

I really don’t see how our our draft strategy has changed after free agency. Not one bit.

We upgraded depth? Our positions of need/holes still exist. Front 7 on D has upgrades at depth, but need a game changer and starter, thus two holes? OL needs help, we need a 3 down RB, and a few WRs.

What’s changed? We upgraded depth. Ok. Next.

    • steveccnv's avatar steveccnv says:

If we get a few more WRs, who are you getting rid of?

Right now our WR depth chart is Parker, fuller, Williams, Wilson, grant , Bowden, perry, burns, foster and meritt

        That’s decent depth on paper

But how many combined games have that group missed

There’s potential with Bowden and Perry but I really didn’t see much from either last season

That’s not a solid unit. Our current unit is a roll the dice unit. Rolls the dice and hope they stay healthy and the young guys blossom

Honestly technically the best player in the unit (Parker) can easily drop to 3 if we draft two receivers in the first couple of days

I like the speed fuller brings. But I think he made grant expendable.

I want to give Wilson, Williams, Bowden and Perry a shot to Compete in training camp, but I’m not relying on my of those players

Not only do I think it’s a mediocre depth chart right now

But the whole team build crashes if Tua doesn’t continue to develop
We focused on OL last season
        He needs weapons

Part of adding weapons this off-season isn’t just to fill holes, it’s to help our young QB develop

Are we or aren’t we on the hook for Isaiah Wilson’s guaranteed money? It is called guaranteed for a reason. So if not us then the Titans must still have to pay.

    • mf13ss's avatar mf13ss says:

When a player is traded, all guarantees are paid by the team that traded him away.

      • stangerx's avatar stangerx says:

Think I knew that at some point….thanks. And that would mean we had zero obligation to him except if on the roster for the whole contract. Guarantees never revert to the team he’s on? He had them till 2023.

      • pheloniusphish's avatar pheloniusphish says:

Not usually. When a team picks up a players contract, the team picks up the guarantees. Maybe different for signing bonuses.

      • stangerx's avatar stangerx says:

Phelon — one part can guarantee is that the proration of the signing bonuses stays with the team that already paid them. They don’t all hit the cap number when paid, but whatever is left on that turns into dead cap with a cut or trade.

I tore my rotator cuff and my right shoulder is jacked. They are wanting to do physical therapy first and go from there. I am currently scheduled for it at the Navy Hospital but trying to get them to give me an outside referral so I can go there to the Andrews Institute. Main reason is if I have to have surgery I will already be in their network and the Navy will just refer me to them who are arguably the best in the bizz.

Thanks for sharing, BBM. I was checking out tape on EDGE guys a month or so ago, and I came away most impressed with Azeez. Truth be told, I had no idea he was such a leader both on and off the field… definite PLUS, and it makes me want to draft him even more now.

Yeah, man… get that shoulder of yours fixed up. Hope you get the best care/treatment/rehab out there, and best of luck. The sooner, the better.

    • steveccnv's avatar steveccnv says:

He sucks, maybe I’d use a 7th on him.

Go watch the Auburn game tape, dude is loafing all over the field. The only time he makes a play is when the play comes to him.

Watches some highlights too and he’s slow, no quick twitch, but he does have some bend.

Playas play, talkers talk, he’s all talk

  14. mf13ss's avatar mf13ss says:

I’ve seen recent mock drafts from people I respect, and they exclude Gregory Rousseau from the 1st round. I’d love to know what they may or think they know, that I clearly don’t know. Similarly, I’ve seen Micah Parsons drop to as low as the 20s (1st round) in recent mock drafts, but he’s never excluded from the 1st round.

    • mf13ss's avatar mf13ss says:

And I don’t mean to insinuate that Rousseau may have an off-field issue… that’s not what I’m going for, and I’m really not ‘going for’ anything. It seems to me that Rousseau may be considered to be a project player, being he’s so raw, coupled with opting out of the ’20 CFB season.

Still… do you let a player with such MAJOR upside like Rousseau fall to the 2nd round? I mean, I think SOMEBODY will take him in the 1st round. But if he falls to the 2nd, so be it… value pick for us there.

      • stangerx's avatar stangerx says:

We did just take two sorta of middling guys who can play edge. Sounds like a platform for a raw talent, especially at a good price.

      • mf13ss's avatar mf13ss says:

        Good point… something to consider.

      • steveccnv's avatar steveccnv says:

If he’s there at 18 and we don’t take him I’m going to be pissed.

He’s got the great go go gadget arms, strong hands and a massive frame. His pursuit is great too.

When I watch tape for front 7 I want to see the guy, that looks different from everyone else, once the ball carrier gets past the LOS. He has that.

OV has it too, that’s why he gets so many pressures

      • steveccnv's avatar steveccnv says:

The 2 middling guys are for ST and for depth. You need guys that can come in and play, when others get hurt.

When you sign guys to 1 year contracts they have little affect on the draft, except that allow you to not reach

      • stangerx's avatar stangerx says:

steve — but assume they can play. Thought them there a reason to take Rousseau.

  15. stangerx's avatar stangerx says:

Travis Wingfield talking about Will Fuller. Dude can play slot. Means we draft a WR high and our 3 best WRs can still line up.
    —————————-
Oftentimes, wide receivers with a high-end top-gear develop reputations as one-trick ponies – incomplete players. With regards to Will Fuller, that couldn’t be further from the truth. The Texans lined him up all over the formation and he’s shown an ability to beat all types of coverages.

Aligned to the boundary or the field, condensed inside as the slot or in a “nasty” split (in tight to the formation), Fuller’s versatility made him invaluable to the Texans passing game. In the 11 games he played in 2020, Fuller topped 82 percent of the offense’s snaps on eight occasions.

  16. mf13ss's avatar mf13ss says:

And now, a philosophical thought of sorts… something I’ve been pondering for a while. Would it be prudent to ‘bring the band back together’… meaning, to provide Tua with one of his WRs (Devonta or Waddle) and his RB (Najee)?

On one hand, you’ve got the chemistry already developed there. On the other hand, piss off one, and you may piss off the other two, being they are ‘family’ of sorts coming from the same college team.

This is a BUSINESS, first, in the NFL. As a manager myself, my company’s rules prohibit me from putting families together… and I understand why. If I’d have to fire one family member, I could likely lose any other family members as a result, now I’m down, say 3 people on the workforce.

So my question to all of you is this: would it be wise to bring Devonta or Waddle, and Najee to Miami, to reunite with Tua? The football fan in me says, “HELL YEAH!!!”. The manager in me says, “Woah… DANGER, WILL ROBINSON”.

Yo, we’re talking about Azeez, right? He’s a consensus 1st rounder by most, right? I read an article the other day about how Azeez is stiff and lacks bend… and the author was STILL drafting him in the 20s, 1st round.

I’ll check out his Auburn tape as you suggest. I’d like to know if he was dealing with something that game (injury or otherwise) if I do see him loafing around.

    Steve, I respect you, man!

    • steveccnv's avatar steveccnv says:

It was the first game tape that came up, usually that means it’s his best game.

I didn’t watch the entire thing, but he did enough bad things in the portion I watched to see enough.

I read the article above first and was ready to say draft him at 18, but I know better, than to take a U75s word for it.

His highlights show some bend, not as much as he claims, but good enough

  19. steveccnv's avatar steveccnv says:

Watched Adam Butler’s presser, I’m impressed. No BS and not stupid either, very genuine.

One of our beat writers asked him a trade secret and he let em have it.

Those are the lunch pail players, they come in do their job and let others do theirs and aren’t show boating of getting into nonsense. I prefer that kind too but you have to have a full team of those if you wanna get it right, one guy who isn’t can upset the whole strategy kinda like in the old school Spartan military formations. Incredible things can be done with those guys but these days it’s hard as fuck to get a whole unit filled with those guys

      • steveccnv's avatar steveccnv says:

  21. steveccnv's avatar steveccnv says:

If we don’t replace Lawson, we’ll just continue to use the scheme passrush. Confuse the O on who is coming and get someone free. Baker, McKinney, AVG, Beigel and even Eguavoen can get pressure on the QB.

What Flores wants is an Edge to bring consistant heat, without scheming, opposite Ogbah

  22. mf13ss's avatar mf13ss says:

Steve, while you’re watching player interviews, check out Micah Parsons and let me know what you think of him.

I’ve already formulated my opinion, but without letting you know, I want to know what yours may be.

    • steveccnv's avatar steveccnv says:

Saw parts of 3 different interviews, he’s not down to earth country boy like Butler, but he does have his head on straight. He’s born to be a football player.

Kind of comes off as if he was putting on his interview persona, that’s why I watched the 3, but that’s just how he is.

I saw more positives, than negatives and nothing that would deter me from drafting him high, even our 1st pick

      • mf13ss's avatar mf13ss says:

Thanks, Steve. One of the multitude of interviews I saw, he was constantly holding his head to the side. I’m not sure if he’s cocky or confident, but he certainly exudes football. I kind of think he’s on the cocky side, but not sure.

I sense something… not good about him, though. JUST MY OPINION, nothing more, and I could be completely wrong. I’m a PSU-er, so I’m not trying to throw salt into his game, to be sure. But still… I get a vibe that’s not good…

      • steveccnv's avatar steveccnv says:

I get vibes too, that’s why I watched 3 interviews, but in the end his cockiness or whatever fits the position, so I’m fine with it

Duke Riley numbers not yet in, so we still have a little money to play with before we have to play with the cap.

The Duke’s numbers have been posted, he’s a 987,500 cap count.
Cap now 12.06m, costing a net of 210k against the cap. Same figure as Scarlett

That’s not always true. We were supposed to be on the hook for 3.9m in guarantees, as the contract was written, but he may have voided the future guarantees
    —————-
As what contract was written, the Tennessee Titans’ contract? No.

Unless there was a provision in the trade (yes, it sometimes happens… see the Stafford-Goff trade), the Titans eat the guaranteed $$$. WE didn’t sign the contract with Wilson, THEY signed the contract. Thus, all bonuses and the like are off the table for us… including guarantees.

    • stangerx's avatar stangerx says:

Least the Dolphins beat writers say Wilson was cut at no cost. Whatever the reason have to believe that given a number did. Might be what Phelon put out….. that his guarantees were canceled cause of his behavior with the Titans.

    • steveccnv's avatar steveccnv says:

It doesn’t matter who signs it, when a trade is made all provisions in the contract go to the new team. In his contract he has guarantees for his yearly salary for 2021, 2022 and a small amount for 2023. Those guarantees have to be honored, unless something voids the contract.

Based on what you’re saying, if he had played for us this year the Titans would be obligated to pay his salary.

Over the cap has him removed from the top 51 and no dead money shows up, so I believe his contracts guarantees have been voided.

      Just found this

      Contract Notes:
      $11.35M guaranteed (signing bonus + 2021 salary + 2022 salary + $1.09M of 2023 salary)
      5th-year option available

This Draft (2021) is going to be the most difficult to predict in NFL Draft history… thanks to COVID-19. And our Phins just keep us sitting on the edge of our seats, what with we’ve done (or not done) in FA.

We fans suddenly think we’ve got it figured out, then *BOOM*, we cut this guy or that guy. Then we re-calibrate, then *BOOM*, something else goes down, whether it be a new signing or another cut.

    VERY CURIOUS!!!

    • steveccnv's avatar steveccnv says:

A Flores D is the same way. Our D was lights out a lot last 2 years, especially 3rd down D, not something the talent on the D warrants

  30. pheloniusphish's avatar pheloniusphish says:

M – You are incorrect about who pays guaranteed money. Anything not already paid (future salary, guaranteed or not) is the responsibility of the new team, and counts against the new team’s cap.

Anything already paid (signing bonus, the salary up to that point in the year for mid-season trades, etc.) is the responsibility of the old team, and counts against the old team’s cap.

Grier doing good work. He knew Wilson’s guaranteed was voided and knew it would cost us almost nothing to try him out. I hope Wilson never plays a down in the NFL. The game already has enough selfish players.

I’d honestly ne fine with any of the elite prospects in this draft including Parsons, Chase, Sewell, Pitts, etc as our first pick. I can’t see how we don’t have someone wanting to trade up but I wouldn’t go below #9. My preference is Pitts, Chase, or Smith for our first pick since Waddle will be gone before 18 and I value the extra help for Tua over the defensive side. Parsons is really tempting though. Those elite LBs really make a difference.

They say they want to be doctors, lawyers, engineers. But when I speak at predominantly black schools 90 percent of kids want to play sports,” he said in that interview.
“There are a couple that say they want to be doctors which makes me really proud. Our kids are brainwashed if they think they can only play sports or be entertainers. You gotta a better chance to be a doctor or a lawyer than playing in the NBA. There are 400 players in the NBA. What are the chances you are going to be one of the 400 players in the world? I’m not trying to bash their dreams, I wish everybody can do it, but you also have to be realistic. You are not going to play in the NBA; who are we kidding.””

Still some bargains to be had in FA, I’d sign Clowney to a multi year deal, so that the cap hit is lower this year.

They can fit him in under the 12m cap right now, but would need to rework some contracts before signing the rookies

    • ocalarob's avatar ocalarob says:

no way i even consider clowney, forgetting that he’s done everything to avoid miami, i think his days are numbered.

to give him a multi year huge contract that i’m sure he’ll demand, no thanks, i’ll keep van ginkle.

    • New Age's avatar New Age says:

I really dislike Clowney. He’s not very productive. 32 sacks in 7 years and 83 games. He’s only had two years where he played at least 15 games. His stats are journeyman stats. I think Tenn also knows this guy and just like Wilson, we should go ahead and pass.

  47. ocalarob's avatar ocalarob says:

i wonder if Wilson clears waivers?

  48. ocalarob's avatar ocalarob says:

i think they should’ve at least got him in the system, clearly an immature kid, they could have tried to educate him, they new going into that deal he had issues. kinda raises eye brows, why pursue him in the first place? you knew he had baggage going into the deal.

as for costing Miami nothing, it did cost them, they lost a 7th rnd pick this year, vs a 7th rnd next year, that 7th rnder is worth a 6th in next years draft, not much but i keep hearing miami didn’t lose anything.

i keep seeing some questionable decisions by this F.O.

    • The Flying Pig's avatar The Flying Pig says:

They tried to and he rejected their help

considering they knew he had issues it doesn’t appear they tried enough, my concern on this is not about the success or lack of regarding Wilson.

it’s the decision making of this F.O. they must not have thought while making this deal they were confident that while stepping in a bucket of shit they would not get any on their shoes.

        it’s the little things.

      • The Flying Pig's avatar The Flying Pig says:

I think they quickly saw enough

        Read this

  49. ocalarob's avatar ocalarob says:

Steve as you said earlier that Miami could rework some contracts that could provide more cap space, i think one contract is bound to be reworked, that of Howard.

he’s unhappy not being the highest paid cb in the league, he’s not even the highest paid on the team.
i think they will rework his deal, give him a signing bonus to clear more cap space as future caps look to be on the rise.

  50. The Flying Pig's avatar The Flying Pig says:

What a complete disappointment Clowneys career

Do you remember when we used to talk about him as the nfls next great pass rusher
When he was a sure thing to be the first overall pick

He has now played on 3 (about to be 4) different teams in 7 years and is the last pass rusher standing in free agency, in other words, no one wants to pay him

He never had double digit sacks and he still living on the legacy of a highlight sacking the Michigan QB

If he doesn’t lower his expectation of his value, I don’t think he plays in the nfl gain

I almost thing he’s fine with not playing in the again after being overpaid for years

    • New Age's avatar New Age says:

Those are my thoughts as well. He’s always promoted himself without the production to back up his big talk.

I still had hope for him when Houston tried to dump him here but he went to Seattle…and they didn’t want him either. I just read an article from last year where Tenn was excited to pair him with Vrabel.

Move to this year and Tenn doesn’t want him back. Three teams saw extensive Clowney…and don’t want him back. Buyer Beware.

I haven’t been on much lately, can’t blog at all during work hours. I wouldn’t doubt it if someone already brought this up, but our 7th RD pick that we get back from the Titans in the Isaiah Wilson trade doesn’t happen until next season now because we cut him, so the Titans get our 2021 7th and we get their 2022 7th

  65. steveccnv's avatar steveccnv says:

Orob raises some good points on the Wilson trade.

I see a red flag when an FO makes a trade like this, then 3 days later releases him.

It’s not really about the compensation, but, because there was compensation you have to ask why they didn’t vet Wilson.

Hey Wilson howya doin? Was that the end of it?

Did they even talk to him? What made them think they could change him? Why didn’t they put some type of conditional clause in the contract?

Most of us will give them a free pass, because of what they’ve done the past 2 years, but should we?

It’s not really a big deal, but, if someone wants to ask they shouldn’t be belittled, and has the right to call them out.

I want to hear one of our beat writers ask them what they were thinking.

    • ocalarob's avatar ocalarob says:

The fact that they went ahead with the deal i would think they should have tried other avenues to correct his behavior with actions detrimental to the team and suspend him without pay.
the best way to straighten someone up is to take away that pay check.

instead he’s free to sign with another team if he clears waivers.

maybe that was his objective all along.

      • steveccnv's avatar steveccnv says:

I can’t see that as his objective, because his salary will be less.

    • Mike E.'s avatar Mike E. says:

I think most teams just look at the upside on the player and consider those 7th RD picks kind of disposable.

      • steveccnv's avatar steveccnv says:

I think we as fans think 7th rounders are disposable, but I’m pretty sure the FO does not.

Look at all the ass kissing they have to go thru to get UDFAs to sign, so one less that they don’t have to take that route on

    • mf13ss's avatar mf13ss says:

      • mf13ss's avatar mf13ss says:

It cost us a 7th rounder this Draft for a 1st round pick from just last year. Had it worked, people would be singing the praises of Coach Flores. Now, we merely lost a 7th rounder this year. IMO, it was worth the risk.

    the best Player or Picks?
depending on the compensation and that may lead to who’s there at 3, i think it may be best to trade back. if Wilson is there at 3 and i were calling the shots i would take him.
being that most of you think Tua is a superstar that may be out of the question for this F.O.

so who’s there at 3 that is better than getting multiple early picks and a future 1st rnder?

maybe Sewell? i can’t see any wr worth those picks though

  68. Mike E.'s avatar Mike E. says:

It didn’t actually cost us a 7th RD pick, just a 1 YR delay until we get the pick. Not so terrible

if you were in the draft and a team didn’t have any picks left yet they liked a guy who may get drafted in the 7th, the proper comp to give up our 7th in that situation would be at least a 6th in next years draft’ maybe more.

over time these free radicals causes cancer

this goes for any fast food restaurant,
the best oils to cook with have a high smoke point. such as clarified butter, coconut oil, avocado oil.

not good to cook with olive oil as it has a lower smoke point and can become rancid.

olive oil ain’t good for frying. Real good for salads, sauces and dips.

      • ocalarob's avatar ocalarob says:

real extra virgin olive oil is super healthy for you, just don’t heat it up, also don’t buy the low fat or other gimmicky types, extra virgin is the best and you should research the brand name as some that are out there contain other ingredients that are unhealthy.

believe it or not, Kirkland olive oil from costco is said to be the real stuff.

      • mf13ss's avatar mf13ss says:

Very true. And by the same token, if one is trying to lose weight, stay away from fried foods in general.

      • ocalarob's avatar ocalarob says:

not really, depends on what you fry them in, the best food you could eat is an egg, and i fry them in C butter all the time, for the most part i use an air fryer to cook meat.

    • mf13ss's avatar mf13ss says:

I’ll pass this on to my friends, too. Man, almost anything coconut is good for you. And as a huge fan of avocados, I can tell you they are also a ‘super-food’.

Yes, a couple of years, at least. I think(?) he’s following me again on Twitter: ProfessorKlump.

Good for you cutting out fastfood, Rob. You’re basically just putting garbage in your system with most fast foods. Congrats on the weight loss. Being healthy as you get older increases the quality of life immensely.

Avocado oil is my favorite cooking oil. High quality olive oil is a finishing oil, not a cooking oil, at least in my kitchen, and low quality is trash. Ghee and clarified butter are the only butters I cook with, and unrefined coconut oil is my favorite flavoring cooking oil (things like tortillas for tacos) or other low temp cooking methods.

    • CavalierKong's avatar CavalierKong says:

You really can’t beat avocado oil when it comes to the smokepoint, it really doesn’t cost much more than veg or canola oil, it has a neutral flavor, and is healthier.

    • stangerx's avatar stangerx says:

Cav — I can cook one thing well. Chinese stir fry. Was taught to me by a woman from Szechuan and she didn’t do it like most Americans or even most American Chinese places do.

Marinate your protein for a while (chicken best cause absorbs) with peanut oil/soy/garlic/ginger and your favorite spices and sauces then cook. Then cook all your other ingredients each by themselves with the spicing and sauces you like. Key is each one is cooked just to your own perfection with its own flavor. For instance for me when the mushrooms start to give off water.

Then recombine in a pan or Wok and heat all to serving temp.

Somehow thought you might be the only guy on the board who would actually try it.

    INTERESTING! Didn’t realize that.

Seems like air-fryers are the buzz! I’d always eaten healthy, but now that I’m in my mid-40s, I’m not eating as healthy as I once had… nor am I as active as I once was. I think an air-fryer is in order for me, coupled with the sage advice you’ve given. ORob, thank you, Brother!

  84. CavalierKong's avatar CavalierKong says:

Deep frying stuff, you can’t really get away from the amount of oil you ingest, but regular fried foods, often people use way more oil than they need. If you know how to use a steel pan properly, you can fry most things in a couple tsps of oil. It’s all about knowing how to heat the pan properly.

It’s been a long while since I merely mixed-n-mingled with y’all. I’m usually talking about ANYTHING football, steering clear of politics, and… talking about ANYTHING football!

It was cool to catch up with some of y’all on a personal level, on this lazy Sunday, with no new football news. Gotta run… I’ve got some work to do on this beautiful Sunday afternoon in PA, in the mid-60s!

    Laterz, good peeps!

I ALMOST feel guilty after reading about all these healthy eating habits that I don’t follow any of it and just basically eat what whatever I want, lol.

    • CavalierKong's avatar CavalierKong says:

I lived that way for a long time. It wasn’t even my health that got me eating better. I just got so into cooking about 15 years ago, and I have learned so many different methods, I’ve reached a point where I’ll basically only eat it if I cooked it.

So I got away from fast food and crap mostly out of snobbery, lol.

  87. CavalierKong's avatar CavalierKong says:

    Stang,

Cheers, I do a lot of stir fry cooking. I’ve got a carbon steel wok I treat better than my own kids. It’s got 3 years of seasoning, and something tells me you know the value of a properly seasoned wok, and the time invested to get it done, lol.

I’ve used the separate cooking method you describe for years. It produces the absolute best results- crunchy vegies, and perfectly velveted meat, so good. Although I have to say I usually only flavor the protein, cook everything separately, then cook a sauce to add it all back in to. I’ve never tried seasoning the vegies and add ins separately and prior to cooking. I can see how you would build extra layers of flavor that way. I’ll give it a shot. I’m doing a bok choy and shrooms tonight that I can mess with. 🙂

    • CavalierKong's avatar CavalierKong says:

The wok is designed specifically for that separate cooking method you describe. The idea is to move food up the sides where they stop cooking and cook in the middle where it is screaming hot. I could never get that moving food up the sides thing to work properly though, so I always move the individual items out of the wok, then throw them back in.

Not surprised you were already there…. same time most people are not. Would love to see you and Chef Warren together at the Fest tailgate. He’s as foody as they come too.

Long as spicy is OK…. buy this. The secret ingredient of the marinade the woman who taught me had. She used to have to find chinese specialty stores, but now we have amazon.

Oy…You guys are killing me! I can’t post on my phone so I read all the shit y’all post but can’t answer.
M – I took your post as tongue-in-cheek and replied the same. All good.

Krishna is still my favorite histrionic liberal frenemy. We mostly agree on football if never in politics. (How’s that southern border working for you?)

ORob – This whole insinuating “You wouldn’t say that to my face because I’m big and would kick your ass schtick” is old and stale.” Stick to football opinions. Come to the next fest and I’ll say the same and you won’t do shit about it. Other than beat me at pool which I suck at these days.

Mmm… It’s 73 degrees and sunny where I am. Gonna go outside and drink a beer while enjoying the weather.

Amazon changed my culinary life, especially with Indian and Thai dishes. Using thyme and coriander powder as ‘substitutes’ just doesn’t cut it now. I can order garam masala, kashmiri chili powder, fenugreek leaves, cardamom pods, garlic/ginger paste, and panang curry paste and get them all to my house in 1-2 days, lol.

And I can legally buy as much high-end pot as I want less than a mile from my house?!

    I LOVE THE FUTURE!! lol

  98. CavalierKong's avatar CavalierKong says:

    Krishna,

One of my favorite things to do is about once every month or two I’ll invite another couple or a few friends over and cook them a badass authentic meal. Prior to covid, I was on an Indian kick, and I’m still there, lol. Prior to that it was Thai.

I prepare everything from scratch- chicken curry, butter chicken, pakora, mint chutney, tamarind chutney, saffron rice/potato pilaf with almonds and raisins, and garlic/cilantro naan.

Tooting my own horn, I’ll stack my food up against any Indian restaurant (except my naan, it’s good, but I just don’t have the right kind of oven to match what you get at restaurants).

If you were out here, I’d invite you over, bro. Literally my favorite thing to do is cook for people, especially when it coincides with football.
